INGREDIENTS:
1 lb. Virgin Bay Salmon
1 fresh lemon
Capers
2 Tbsp olive oil
1 Tbsp Old Bay

- (1 lb) Coho Salmon Filets

Directions:
Cut the fish into 8 ounce pieces, or two pieces per pound. Salt, pepper, and sprinkle Old Bay over all. In a medium skillet, sear the FLESH side first, 1 1/2 minutes. Then, flip to the SKIN side, 1 1/2 minutes. Move to oven for 3 minutes at 400 degrees.
Squeeze fresh lemons over all and add capers.
